Lime Juice
Name of a mexican dish made with catfish and lime juice?
At my previous job my supervisor brought a mexican dish for potluck. I think it was “boiled” catfish refrigerated and then she had chopped onions and some type of green leafy stuff in there and she squeezed lime juice on top. It was sooo delicious. Does anyone know what this dish is called and where I can get the recipe?
It is served cold. It’s like a dip you eat with tortilla chips.
i do use these mexican fish recipes a lot….. the first one maybe similar….
LIME CATFISH
INGREDIENTS…
1 tablespoon margarine
2 tablespoons fresh lime juice
1/4 teaspoon freshly ground pepper
1/4 teaspoon garlic powder
2 catfish fillets (6 ounce size)
DIRECTIONS
Melt margarine in a saucepan. Stir in lime juice, pepper and garlic powder; mix well. Remove from the heat and set aside.
Place fillets in a shallow baking dish. Brush each generously with lime sauce.
Broil for 5 to 8 minutes or until fish flakes easily with a fork.
Transfer fish to a warm serving dish; spoon pan juices over each fillet.
FISH VERACRUZ
INGREDIENTS…..
1/4 cup olive oil
1 small green bell pepper, chopped
1 onion, chopped
3 cloves garlic, minced
1/4 teaspoon ground white pepper
1 teaspoon ground cinnamon
1 lime, juiced
1/2 cup pimento-stuffed green olives, sliced
1/4 cup canned diced green chiles, drained
3 large tomatoes, seeded and coarsely chopped
4 (8 ounce) fillets red snapper (or fish of your choice)
1 tablespoon capers, rinsed and drained
DIRECTIONS
Heat oil in a large skillet over medium-high heat. Add green pepper, onion, and garlic, and cook until pepper is soft, about 5 minutes. Mix in the white pepper, cinnamon, lime juice, olives, and chiles; cook for 2 more minutes, to blend the flavors. Stir in the tomatoes, and cook until thickened, about 10 minutes.
Preheat the oven to 350 degrees F (175 degrees C). Place the snapper filets into a lightly greased 9×13 inch baking dish. Pour the tomato sauce over the filets, and bake for 10 to 15 minutes in the preheated oven, or until fish flakes easily with a fork. Stir in the capers just before serving.
